Almost time for those fresh peaches! This is one of my favorite recipes.

This recipe can be made using fresh or canned fruit. If you use fresh, just peel, pit and slice into a bowl and stir about 1/2 to 3/4 cup of sugar and let it sit to dissolve. Any kind of fruit can be used for this recipe.

Peaches and Cream Cobbler

1 small package (3 5/8 oz)
instant vanilla pudding
3/4 cup self rising flour
1/2 cup milk
1 egg
3 tablespoons margarine, softened
1 large can, 1 pound 13 oz, sliced peaches, drained, reseving 3 tablespoons juice
(fresh peaches peeled , sliced and mixed with sugar in the summer)
1 package (8 oz) cream cheese, softened
1/2 cup sugar
2 teaspoons cinnamon sugar

Preheat oven to 350 degrees

Mix together pudding mix, flour, milk, egg and margarine.
Beat for 2 minutes and spread in bottom of a flat,
2 quart, 8 x 12 inch baking dish which has been coated with a
non-stick spray.
Drain peaches and spread over dough mixture.
Mix together the cream cheese, sugar and peach juice.
Beat for 2 minutes and spread over peaches.
Sprinkle with mixture of cinnamon and sugar.
Bake for about 35 minutes and serve warm. Makes 10 to 12 servings.

YUMMY!!

Ellen, I still think you need to publish your own cook book.

In the mean time, just keep sharing the great recipes. I've printed this one & can't wait to try it!

Thanks

Roswell

I have thought about publishing my own cookbook when I retire. I love to cook and try new things when I have the time to stay in the kitchen for a while. I just enjoy sharing great recipes and have over the years collected quite a few.

You will love this peach cobbler recipe. I am a member of an online quilter's guild and sometimes we post favorite recipes on our page along with our quilt pictures and patterns. I had forgotten about posting this peach recipe until one of the ladies made it again and posted how the ladies in her office begged for the recipe. I knew GemMan's peaches were almost here and it would be the perfect recipe of the week for p.commers.

Just wait till Thanksgiving!! wink.gif

PS If any of you make these recipes, please bring me a sample to my house so that I can do a taste test......................... laugh.gif

Good Morning Ellen!

I can't wait to try this cobbler. Clint wants me to go over to your place and learn to be a great Southern Cook (just like you) but the cobbler will be a start. I'll let you know how it turns out!

I made this last night. IT WAS SOOOO GOOD! Kind of like peach cobbler with the ice cream already in it, but better. I made it with the canned peaches. Next time I am going to use fresh peaches and make a double batch so maybe the kids will get to try some! laugh.gif

I had to come look on P.com to find my recipe. It is lost in one of my stray cookbooks!

I am so glad I posted this one on here.

Send me the recipe, Burnt Hickory Mimi. I'm putting my blueberries in baggies and putting them in the freezer. Will they keep that way?

West Metro

I used blueberries last evening when I made this recipe.

Wash about 3 or 4 cups of berries, put about 3/4 cup of water in a pan with 1/2 cup of sugar and simmer till the sugar melts.

Use that just like the recipe calls for peaches. Drain, reserve some juice and spread the berries over the batter. I did sprinkle 1/4 cup of sugar over the blueberries before adding the cream cheese topping.

It was YUMMY.

Things are going great with me, covered up busy and love it that way.

Lady Raider.............you are welcome at any time in my humble abode. biggrin.gif
